What is celiac disease? :The celiac disease is intestinal malabsorption related to gluten and especially to one of the fractions of gluten, gliadin. It can occur at any age, in young children, adolescents and adults. People with celiac disease can not be fed with food containing gluten.


What is gluten?

 


The Gliadine part toxic gluten, is a protein reserve contained in certain cereals: wheat (Froment, Epeautre, Kamut), oats, barley and rye. The food grain by these compounds or their derivatives such as flours, starches, flakes, all contain gluten.
